Recipe for Tzatziki
------------------------------------------------------------------
ingredients:
2 greek yogurts (if you don't find those, use plain white yogurt (no sugar), the thicker the better)
2 cucumbers (medium size, not too big)
2 garlic cloves
2 table spoons olive oil
vinegar (there "vinagre de jerez" in your Mom's cabinet in the kitchen, that's what I would use)
salt and pepper
12 pita bread
----------------------------------------------------------------------
put in a bowl the yogurts and season it with salt and pepper
add the vinegar and mix it all good.
Now add the olive oil and do the same
for the garlic you need to crush it first then add it to the bowl and mix it again
For the cucumbers, a little tip, after wahs before you peel them, shred them a little bit (very thin, you know with the "other" part of the cheese grater, the side that makes it really small,) until you have some "green dots" that we will use to put some color at the end.
Then you have to peel the cucumbers, cut them in half and remove the heart of them (all the seeds and the parts that contain more liquid)
Then shred them (normal part of the cheese grater) but not too thin.
Put them in the bowl and mix it with the rest.
We are almost done. You can put it in the final bowl if you want and add the final touch. Put "green dots" slightly over the mix and 1 table spoon of olive oil. I also put a dark olive in the center and the hearts of the cucumbers (if you had a "heart remover" and they came out as cylinders)
toast the pita bread and put it in a plate next to it.
-----------------------------------------------------------------------------------------------------
And there is your Tzatziki ready to go, it is a lot easier than it sounds once you do it
Enjoy it.
